Lavender Jelly

Makes 4, 8 ounce jars
Ingredients:
3 tablespoons pectin
3 1/4 cups sugar
3 tablespoons lavender, available at tea or spice shops
1 tablespoon unsalted butter
1/4 teaspoon salt
Directions:
Combine the pectin and 1/4 cup of the sugar in a small bowl. Reserve.
Combine the lavender with 1 cup water, butter, salt, and remaining 3 cups of sugar in a heavy saucepan. Bring to a vigorous boil over high heat, and boil vigorously, stirring occasionally for 5 minutes.
Gradually add the pectin mixture, whisking constantly. Return jelly to a vigorous boil, stirring constantly, and boil, stirring constantly, 1 to 2 minutes (mixture will thicken slightly). Remove from heat.
Store in sealed jars in the refrigerator.
