Ham and Pineapple Tea Sandwich

Serves 6
Ingredients:
8 thin slices of white sandwich bread
2 tablespoons unsalted butter, softened
6 ounces baked ham, finely minced
1/2 cup pineapple chunks, very finely chopped
1 tablespoon mustard
Directions:
Lay the bread slices out on a work surface and butter each slice on one side. In a small bowl, stir together the ham, pineapple, and mustard until combined. Divide the mixture between 4 slices of buttered bread and top each with another slice of bread. Press the sandwiches together lightly. With a sharp knife, remove the crusts and cut each sandwich into quarters.
