Three P's Salad

Serves 6
A favorite during Edith Wharton's day, this mix of sweet chopped pickles, peas and peanuts creates an unusual salad well worth rediscovering.
Ingredients:
1/2 cup chopped sweet pickles
1/2 cup coarsely chopped peanuts
1/2 cup peas, cooked
2 tablespoons mayonnaise
Salt and pepper
6 outer leaves of iceberg lettuce
Directions:
Combine the pickles, peanuts, peas, and mayonnaise in a medium bowl. Season to taste with salt and pepper. To serve, divide the salad evenly into each lettuce leaf "cup".
